Dafür die Champignons putzen und in dünne Scheiben schneiden. Etwas Öl in einer Pfanne erhitzen und die Pilze darin knusprig anbraten. Mit Salz, Pfeffer und etwas Knoblauchpulver würzen.</div></li><li id="wprm-recipe-5710110-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Die Walnüsse mit Zucker und Wasser in einer Pfanne aufkochen lassen, dann die Hitze reduzieren. Die Walnusskerne dabei immer wieder rühren, damit sie von allen Seiten mit der Zucker-Mischung ummantelt werden. Sobald das Wasser fast ganz verdampft ist, die Walnüsse auf Backpapier auskühlen lassen. Anschließend mit einem scharfen Messer grob zerhacken.</div></li><li id="wprm-recipe-5710110-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Den Rucolasalat waschen und trocken schleudern (<a href="https://amzn.to/3I17eCS" target="_blank">geht am einfachsten mit einer Salatschleuder, wie dieser von Amazon*</a>). Die Tomaten aus dem Öl nehmen und klein schneiden, den Dill fein hacken (ihr könnt natürlich auch Dill aus dem TK nehmen).</span></div></li><li id="wprm-recipe-5710110-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Nun alles miteinander vermengen: Nudeln, Tomaten, Dill, Pilze und Walnüsse. Die Sauce anrühren und dazu geben, alles gut mischen und mit Salz und Pfeffer abschmecken. Zum Schluss noch den frischen Rucola unterheben – und schon ist der (wahrscheinlich) leckerste Nudelsalat der Welt fertig!</div></li></ul></div></div>

<p>Statt Walnuss-Ricotta-Pesto schmeckt auch ein grünes Basilikum-Pesto oder ein würziges rotes Paprika-Pesto super dazu. Die Champignons kannst du durch Zucchini oder Aubergine ersetzen – beides passt perfekt zum mediterranen Aroma. Und wer den Salat vegan genießen will, nimmt einfach pflanzliche Alternativen für Kräuterquark und Mayonnaise. So oder so: Der Salat wird in jeder Version ein Sommer-Hit.</p>
