<p class="p">Im Herbst habe ich Appetit auf richtiges Wohlfühlessen, das deftig schmeckt und von innen heraus wärmt. Den Strunk dreieckig aus beiden Hälften rausschneiden. Das geht am besten, wenn ihr die Kohlhälften mit der Schnittfläche nach unten auf ein großes Brett legt. Anschließend die Kohlhälfte noch mal der Länge nach halbieren und in ca. 1 cm dicke Streifen schneiden.</span><div class="wprm-spacer"></div><span style="display: block;">Die Zwiebel schälen und in kleine Würfel schneiden.</span></div></li><li id="wprm-recipe-5710724-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Öl in einem feuerfesten Topf oder Bräter erhitzen, dann das Hackfleisch ins heiße Öl geben und scharf anbraten, bis es krümelig ist. Die Röstaromen, die beim Anbraten entstehen, sind entscheidend, damit die Pfanne später schön deftig wird. Wenn das Hack schön kross und krümelig ist, das Tomatenmark dazugeben und kurz mit anrösten.</span></div></li><li id="wprm-recipe-5710724-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Danach die Zwiebeln hineingeben und glasig dünsten. Wenn ihr etwas Salz zu den Zwiebeln gebt, dann werden sie schneller gar. Wenn die Zwiebeln glasig sind, die Kartoffeln dazu geben und ebenfalls ein paar Minuten mitbraten, bis sie etwas Farbe haben. Zum Schluss den Kohl dazugeben und gut umrühren.</span></div></li><li id="wprm-recipe-5710724-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Das Ganze noch mal für 5-10 Minuten anrösten und die Gewürze – Paprika-Pulver, Salz, Pfeffer und Kümmel – dazugeben. Der Kümmel macht das Kohlgericht nicht nur besser bekömmlich, sondern verleiht ihm auch das typische Aroma.</span></div></li><li id="wprm-recipe-5710724-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Wer keinen Kümmel mag, lässt ihn einfach weg. In der Zwischenzeit den Ofen auf 200 Grad Umluft vorheizen.</span></div></li><li id="wprm-recipe-5710724-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Jetzt die gewürzte Kohl-Hack-Kartoffel-Mischung mit der Brühe angießen. Am besten nutzt ihr dafür kochendes Wasser, in dem ihr die gekörnte Brühe auflöst. Durch die heiße Brühe verliert die Pfanne bzw. der Topf nicht die Hitze.</span></div></li><li id="wprm-recipe-5710724-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Das Ganze gut durchrühren, ca. 15 Minuten einköcheln lassen und dann den feuerfesten Topf bzw. die Pfanne ohne Deckel im Ofen noch einmal 10 Minuten garen. Im Ofen bekommt das Gericht noch einmal zusätzliche Röstaromen. Danach aus dem Ofen nehmen: Vorsicht, heiß!</span></div></li><li id="wprm-recipe-5710724-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Zum Servieren mit etwas saurer Sahne und frisch gemahlenem Pfeffer und – wer mag – mit einer zusätzlichen Prise Kümmel toppen.</span></div></li></ul></div></div>

<p class="p">Für den Hackfleisch-Kohl-Eintopf meiner Oma könnt ihr entweder Weißkohl oder Spitzkohl verwenden. Ich persönlich nehme lieber Spitzkohl, weil ich dessen süßliche Note zum deftigen Hackfleisch sehr lecker finde.</p>



<p class="p">Erschreckt euch beim Kohlschneiden übrigens nicht angesichts des riesigen Gemüsebergs. Der Kohl geht beim Braten und Dünsten stark ein – deshalb braucht ihr eine große Menge.<br> <br>Bei den Kartoffeln empfehle ich euch, zu einer festkochenden Sorte zu greifen, damit die kleinen Würfel später nicht komplett zerfallen. Beim Fleisch bietet sich gemischtes Hack aus Schwein und Rind an. Das ist saftiger als reines Rinderhack. Ihr könnt aber natürlich auch ein anderes Hackfleisch verwenden.</p>

<h2 class="wp-block-heading title" id="title_2">Kohl-Pfanne ohne Fleisch: Leckere Veggie-Variante</h2>



<p class="p">Natürlich könnt ihr eine leckere Kohl-Pfanne mit Kartoffeln auch vegetarisch zubereiten. Nehmt dafür einfach 1 Kilo statt 600 g Kartoffeln. Mein Tipp, damit der Geschmack trotz fehlendem Fleisch schön deftig wird: Benutzt Rauchsalz statt normalem Salz.<br> <br> Das passt perfekt zum süßlichen Kohl und verleiht dem winterlichen One-Pot-Gericht eine tolle, rauchige Würze. Zusätzlich solltet ihr drei Esslöffel Tomatenmark statt nur zwei Esslöffel für die Veggie-Variante verwenden. Auch das angeröstete Tomatenmark sorgt für den Extra-Kick an Deftigkeit.</p>
